ambai is a brand devised by Makoto Koizumi, a designer with a reputation for carefully crafting items who is involved in the design of all kinds of items related to daily life from chopsticks to architecture.
ambai items are finely crafted within Japan. An association of creators and designers make full use of regional features and skills finely toning the performance, materials, shape etc of an item. In this way, ambai aims to make items that are good for the user.

The combination of the designer Makoto Koizumi, 100 year old high-quality Tosa cypress and artisans who have continued to make items cherishing local materials, has helped create the world's thinnest cutting board that has a thickness of only 8mm!
Thinness also brings about important lightness. This lightness makes for a useful tool that you will feel close to and gives cypress that has lived for 100 years a new purpose.
Thin and light so you can prepare dishes easily. The resin of cypress has an anti-bacterial effect. As this is wood, it is kind to blades, so knife sharpness will last for a long time.

[The power of resin]
The tar of Shimanto cypress is evidence of the tree's good health. The resin is not dirt but an anti-bacterial mass that suppresses the growth of bacteria. The more resin, the better it resists against water and wood darkening. Should excess resin come out of the board, wash off with hot water.

[Tosa Board Features]
1. Resistant against water: Tosa boards are made of more than 100 year old quality cypress curtailed by the strong Kochi sea breeze. Cypress is used in the foundations of buildings as it is resistant to water and is resilient. This also makes it the perfect material for a cutting board.
2. The power of resin: The resin is not dirt but an anti-bacterial mass that suppresses the growth of bacteria. The more resin, the better it resists against water and wood darkening.
3. Thin & light: By sandwiching cherry blossom wood between straight grain cypress, this 8mm ultra-thin board that won't warp easily was created. This thin, light cutting board will reduce work burden and you will use it often as a favorite item.
4. It is wood: This cypress board is resilient yet soft, so won't damage blades keeping them sharp longer.

[Before using]
*When you open the package,​ the natural cypress aroma will drift up. The cypress aroma will fade with use.
*By wetting the cutting board before use,​ stains and odors will not adhere so easily.
[Handling Precautions]
*After use,​ do not dry quickly in direct sunlight or hot air in order to avoid cracking and deformation.
*Avoid using in a dishwasher,​ dish-dryer and microwave. Cypress has anti-bacterial and anti-fungal effects. It is a material that stands up well against water and doesn't darken easily. However,​ after use,​ wash immediately,​ remove water and dry in a well-ventilated place. Do not use bleach as it will cause deterioration and discoloration of the cypress.
*Leaving in water for a long time or putting into soak to wash is a major cause of cracking and darkening,​ so do not do so.
*Use both sides appropriately to prevent warping.
*Should warping occur,​ wet the cutting board and place for a while with the warped side facing downward.
*Do not use for any purpose other than its intended one.
